Day 50

Yes, yes, I know.
I've been slacking off on this blog.
For the past nine (can you believe it?) days!
I mean, I'm not lazy, I'm just procrastinating by playing mmorpg games. now...just what do I do with those Goddess' Medals?!
On another note, I decided to make some Chocolate Chip Peanut Butter Cupcakes
The peanut butter taste really shines through, subtly for me (I used ABU Peanut Butter), and you don't taste the tofu at all.
You read that right. tofu. In a cupcake recipe?! what?!
This muffin recipe is ridiculously good. I did make some changes, however. Of course, that comes to no surprise. I never follow a recipe to a T (and they don't always flop too, since I've only met 2 flops!) because I almost always find a way to change it up!
Sift the dry ingredients? Nah. Mix dry in one bowl, and wet in another? Nope. Reduce the sugar from 2 cups to 1? Sure. Decrease the butter by 1/3 of a cup? Why not?
  1. Instead of using all purpose flour, I used whole wheat, spelt, and oat flour (equally)
  2. I'm always afraid if there's a typo in a recipe whenever it says a tbsp of baking powder or soda and then I just think, is this seriously how much I'm suppose to put in? so I used 1-1/2 tsp baking powder
  3. I used dark chocolate chips + chopped up leftover Halloween candy (anybody want a jar of chopped up Halloween candy? I mean it too)
  4. I didn't have the listed amount of tofu, so I used just a tad less, only about 2 or 3 tbsp
  5. I skipped the whole cup of maple syrup (for me = honey) and only used 1/2 of the listed amount. The other half? It was replaced with milk.
I think this is, by far, my longest post.

Day 42

Sorry for not posting yesterday. I just didn't feel like posting.
